making the cpk original bbq chicken pizza inspired us to continue and venture into the deep dish.
as one flavor is never enough, half of this pizza is mushroom spinach and the other half is a three-cheese ranch.
in college, i spent quite a few meals eating zachary’s pizza. this pizza reminds me of zachary’s pizza. but it also reminds me of the shadow.
a hybrid deep dish pizza is synonymous to a fallen creature still wrestling with their shadow personality. one thing most people do not know about God is that He forces every real child of God to meet their shadow. so painful can it be, that not many people can survive the process. Jesus guides a person through the process, but only if the person is willing to submit and surrender. this process includes ripping the shadow fully out of the human. let’s just say it is well worth it.
recipe
makes one 14-inch deep dish pizza.
ingredients:
2 pounds pizza dough, garlic and herb flavored
10 ounces pizza sauce
1/2 cup cremini mushrooms, sliced
1/2 cup spinach
2 1/2 cups vegan cheddar cheese, shredded
2 1/2 cups vegan mozzarella cheese, shredded
1 cup vegan gouda, cut into shreds
2 teaspoons dried basil
1 teaspoon dried garlic salt
1 cup of liv b’s vegan ranch sauce (from the sweet siracha cauliflower wrap recipe. select good-tasting vegan mayonnaise or else it will taste weird.)
instructions:
pre-heat the oven to 375 degrees F. make sure the oven rack is placed near the middle of the oven.
if the pizza pan does not come with a non-stick layer, grease the pan with olive oil and use a clean paper towel to spread the oil all around and up the sides.
flour a large cutting board. combine the 2 packs of dough and roll out to fit a 14-inch deep dish pizza pan. overlay the dough in and up the sides of the pan. fold over the edges for a thick edge crust. use your hands to push and press the dough to shape as needed.
first pizza half:
spread a thin layer of all three cheeses first. this is the trick to tasty goodness. 1/4 cup of each kind.
then spread the pizza sauce over.
lay out the spinach leaves.
add another layer of cheese. remember to use all three types! 1 cup of cheddar, 1 cup of mozzarella, and 1/4 cup of gouda.
top off with mushroom slices.
sprinkle 1 teaspoon dried basil and 1/2 teaspoon garlic salt on top.
prepare the vegan ranch sauce with the following modification:
do not add the full amount of nondairy milk. just add enough to thicken to your liking. we are going for a thick, creamy ranch to put on a pizza.
second pizza half:
spread a thin layer of all three cheeses first. 1/4 cup of each kind.
then spread the ranch sauce over.
add another layer of all three cheeses. 1 cup of cheddar, 1 cup of mozzarella, and 1/4 cup gouda.
sprinkle 1 teaspoon dried basil and 1/2 teaspoon garlic salt on top.
when satisfied with the level of cheese you prefer on your pizza, pop the pizza in the oven and cook for approximately 50 minutes. be sure to continuously check up on the pizza. monitoring slow cook items in the oven is a safety must!
remove the pizza from the oven. let it rest for 15 minutes prior to serving.
which side will you choose?
bonus tips:
to serve and not damage your pan, gently slide the pizza out onto a cutting board. it is not as hard as it sounds and will protect your non-stick pan for plenty of future use. do this step after cooling the pizza for 15 minutes. patience, young grasshopper, patience. you want the pizza to thicken a bit before trying to roll it out of the pan.
vegan cheese melts differently from regular cow cheese. the surface of the pizza had cheese that did not melt. under the surface, lay creamy, cheesy melted cheese. if you want the very top layer to melt too, a layer of foil atop the pizza while it is cooking may assist in the melt. i did not bother as i wanted to see the crust puff up and monitor the pizza to avoid burning.
consider using the daiya brand of vegan cheese. in my opinion, it tastes the best and melts the best too! i have been eating grilled cheese sandwiches on oroweat potato bread since i discovered daiya vegan cheddar slices. daiya shredded mozzarella and cheddar can be found at randall’s and whole foods. i have only been able to locate daiya cheddar slices at randall’s.
