recipe @ home | spinach lentil stew | three ingredients

by natural default, people are curious creatures. two questions i am frequently asked are “how old are you?” and “what do you eat?”

so, what do i eat?

let us discuss discipline and physical health.

the reality is that even though this blog includes desserts, i cannot eat like that all of the time. it would kill me. God expects discipline and care of the body He created. because my body is a vessel of the Holy Spirit, there lies the expectation that i will take the responsibility to care for my physical well-being.


let us move on to a series of questions:

can i consume enough iron and protein on a vegan diet? and can i do it without powder (i.e., protein powder)? what about without gaining weight on a vegan diet because i thought i needed to eat more to get enough protein?

answer: it can be done.

do i count my calories and macronutrients?

answer: yes, i do. i do not want to. i have to. but i do not count everyday. to ensure the consumption of enough protein, i count. to hit my macronutrient ratio targets, i count. it is part of the discipline.


here is a sample daily menu:

breakfast

1 latte @ home

lunch

1 #back to reality spinach lentil stew (see below for the recipe)

1/2 block extra firm tofu

snack

2 large oranges

dinner

2 cups soy milk (warmed over stovetop)

4 cups broccoli (roasted in oven with olive oil, sea salt, and pepper)

macronutrient intake

fat = 36 g; protein = 84 g; carbs = 174 g; fiber = 50.5 g; total calorie consumption = 1267 calories*

* it is worth mentioning that i do not count macronutrients and calories of olive oil or broths in my diet. i consider these “free additions.” so the numbers above will be slightly higher.

notes:

  • i am not a licensed dietitian or nutritionist. you are responsible for what you feed yourself. i am only describing what i do here. that is it.

  • i also eat a vegan multivitamin and calcium pill daily. i am not sure if i need to. i simply do it just in case.


recipe

makes one serving.

ingredients:

  • 1/2 cup dried green lentils

  • 4 cups vegetable broth

  • 4 cups organic spinach

instructions:

  1. rinse the dried green lentils.

  2. rinse the spinach.

  3. place the lentils and 2 cups of broth into a pot. cook over the stovetop on the medium-high setting until boiling. lower the setting to simmer. place the pot top over the pot and cook for 25 minutes.

  4. add in 2 more cups of broth and the spinach, occasionally stirring the mixture on medium-high heat until the spinach has softened in the broth.
